You are invited to the 7th Annual Chowder Cook-Off sponsored by Captain Joseph House Foundation, a place of respite and healing for the Gold Star Families of our Fallen Heroes. All proceeds benefit Captain Joseph House Foundation, a 501(c)(3) nonprofit corporation. Visitors can enjoy watching the chefs in action, taste the various chowders, and vote for their favorite!
The judge for the 2019 Cook-Off will be announced at a later time.

The Cook-Off will be held at the Clallam Transit Center, a half-block west of the main Crab Festival tent (which is at the Red Lion Hotel parking lot) between Front Street and Railroad Avenue in Port Angeles, Washington. This is a rain or shine event.

Visitors can purchase unlimited tickets in increments of $12.00 for 5 tickets. Each purchase includes 5 chowder tastes (2 oz. each) and 1 special ticket for the People’s Choice Award.
JUDGING & PRIZES
The official judge is to be announced at a later date. Prizes will be awarded as follows:
- $500.00 – First Place Professional Chef
- $500.00 – First Place Amateur Chef
- $200.00 – People’s Choice Award
- Ribbon – Best Decorated Booth
People’s Choice Award:
There will be a People’s Choice award worth $200.00. Each chowder that has been entered will have a separate container, one per recipe, for People’s Choice voting. Visitors can drop a special ticket into the container to ensure that their favorite chowder wins. The most tickets in the container at 1:45pm will be awarded the People’s Choice Award.
Entries will be judged on taste, aroma, color, texture and nourishment. Only the chowder will be judged, not the garnish.
For the purposes of this Cook-Off, all types of seafood chowders and combinations are allowed, i.e. fish, corn, veggie, clam, crab, meat, etc.
Decorated Booth Award
Tablecloths and booth decorations are encouraged, but not required. Many teams have a common theme for their chowder name, attire and decorations. A First Place Ribbon will be given for the Best Decorated Booth.
Professional: $45.00 first entry, $22.50 each additional entry
Amateur: $20.00 first entry, $10.00 each additional entry
All entry fees go directly to Captain Joseph House Foundation and are tax-deductible.
All applications must be submitted to Captain Joseph House by September 20, 2019.
Cooking & Serving – ALL ingredients for each chowder recipe must be posted on each table for the public to view. All types of seafood chowder & combinations are allowed, i.e. fish, corn, veggie, clam, crab, meat, etc. Official ladles and containers will be provided by the Captain Joseph House Foundation committee. Serving size is two ounces.
Chowder Quantity – You must be prepared to cook a minimum of 6 gallons of chowder. We expect another sell-out year! Reimbursement of chowder food expenses up to $50.00 per entry will be provided, if requested. Please include receipts attached to the CJH reimbursement form.
Cooking Time – Cooking starts at 10:00am and ends at noon. No food preparation or cooking may begin before 10:00am, and chowder must be completed by 12:00pm, when serving begins. An official representing the Cook-Off committee will pick up samples of each chowder prepared and present them to the judge at 12:15 pm. No chowder may be served before noon.
Space and Prep Time – No advance food prep is allowed per Clallam County Dept. of Health regulations. Each Chef/Team will be given a full 10’ x 10’ space in which to cook. There will be NO centralized hand washing stations or on-site cleaning stations for utensils and equipment. Therefore, each Chef/Team is required to provide these facilities for their station per Clallam County Dept. of Health regulations.
Booth Setup and Equipment – Booth setup may start at 7:00am in the Clallam Transit System lane. You may pull your vehicle into the lane and unload at your spot until 8:30am and have a parking space there in the lane. After 8:30am chefs will need to unload their supplies from either Front Street or Railroad Avenue and parking on site is not assured. Please plan to bring everything you will need for the day. All equipment and supplies must fit in your 10’ x 10’ space. Bring a 10’ x 10’ tent or canopy, including required weights for each corner, and tables as needed. Coolers and ice are required for keeping items at proper and safe temperature. Ice is not available on-site. Use propane stoves or charcoal/wood grill cookers to cook chowder, as NO ELECTRICITY IS AVAILABLE; your booth must be self-contained. Because of noise concerns, no generators may be used in your cooking area.
Dept. of Health Requirements – Captain Joseph house has made special arrangements with the Clallam County Department of Health. The usual fee of $115.00 has been waived if the Team completes and submits documents no later than September 20, 2019 to Captain Joseph House, as follows:
- Complete Health Dept. Application for Temporary Food Service Permit
- Copy of Food Preparation Form
- Copy of Food Worker Card (Food Handler Permit) for Person In Charge (PIC)
- Copy of the Captain Joseph House Foundation waiver from Health Dept.
- All documents must be submitted to Captain Joseph House Foundation by September 20, 2019. Late applications will incur a fee of $57.50 to participate in the Chowder Cook-Off.
- Your application will be copied and delivered to Clallam County Dept. of Health by CJHF.
The individual registering for the team must have or obtain a Food Worker Card (Food Handler Permit). Applications may be made online for a $10.00 fee.
